Millionaire Shortbread

Millionaire Shortbread was my all time favourite β€œdessert”; is it classed as a dessert? Anyhow, I stopped eating it after becoming more health conscious many years ago, and have never tried making my own since. I have tried a few vegan ones in cafes over the years but after seeing this recipe from The Happy Pear I thought I’d make it. The recipe sounded easy, it was healthy, and as it was Christmas I wanted to make something for the family which i could eat too.

Fast forward and here I am sharing their recipe as it is delicious, easy and a naughty but nice treat! All ingredients and instructions taken directly from their website πŸ™‚ Photos from my myself and my attempt; the more rustic look πŸ™‚

raw vegan millionaire shortbread

Ingredients:

For the shortbread base:

  • 200g ground almond
  • 100ml agave syrup
  • 60g coconut oil

For the caramel layer:

  • 300g pitted dates
  • 150g almond butter
  • 1 tbsp vanilla extract
  • 6 tbsp coconut oil
  • 6 tbsp water
  • 250g dark chocolate for top layer (I used 200g and it worked fine!)

Instructions:

  • Blend your almond flour in a food processor to a fine texture
  • Add the agave and coconut oil and blend
  • Line a baking tin and spread the shortbread ingredients in compactly
  • Leave in freezer while you make the caramel
  • Blend together your caramel ingredients until smooth
  • Spread this mixture on top of the shortbread in a smooth layer
  • Melt your dark chocolate and spread in another layer of top of the caramel
  • Put in the freezer to set and chocolate to harden for 15 minutes
  • Cut into squares and DEMOLISH!!!
