Millionaire Shortbread
Millionaire Shortbread was my all time favourite βdessertβ; is it classed as a dessert? Anyhow, I stopped eating it after becoming more health conscious many years ago, and have never tried making my own since. I have tried a few vegan ones in cafes over the years but after seeing this recipe from The Happy Pear I thought Iβd make it. The recipe sounded easy, it was healthy, and as it was Christmas I wanted to make something for the family which i could eat too.
Fast forward and here I am sharing their recipe as it is delicious, easy and a naughty but nice treat! All ingredients and instructions taken directly from their website π Photos from my myself and my attempt; the more rustic look π
Ingredients:
For the shortbread base:
- 200g ground almond
- 100ml agave syrup
- 60g coconut oil
For the caramel layer:
- 300g pitted dates
- 150g almond butter
- 1 tbsp vanilla extract
- 6 tbsp coconut oil
- 6 tbsp water
- 250g dark chocolate for top layer (I used 200g and it worked fine!)
Instructions:
- Blend your almond flour in a food processor to a fine texture
- Add the agave and coconut oil and blend
- Line a baking tin and spread the shortbread ingredients in compactly
- Leave in freezer while you make the caramel
- Blend together your caramel ingredients until smooth
- Spread this mixture on top of the shortbread in a smooth layer
- Melt your dark chocolate and spread in another layer of top of the caramel
- Put in the freezer to set and chocolate to harden for 15 minutes
- Cut into squares and DEMOLISH!!!
